PEPPER BERRY POACHED CHICKEN CAESAR SALAD

This recipe was inspired from a similar version by Lola Berry and when i first added the pepper berry to the yoghurt dressing I couldn’t believe how beautifully pink it made it!

The aroma of the pepper berry gives the sauce a bit of a sweet edge that is rounded out beautifully by the salty bacon and the fresh crunch from the cos lettuce makes the dish feel nice and light.

I don’t know the exact calorie count for this one but I feel like its a fairly healthy option and definitely healthier than the traditional version of a caesar salad.

Next time i’ll actually add a poached egg to each persons dish before serving too.

Serves: 4

INGREDIENTS:

2 boneless chicken breasts (skin off)

2 baby cos lettuce chopped coarsely

1/2 cup of pecans or walnuts - chopped coarsely

1/4 cup of finely copped bacon or similar cured meat

3 tbsp of Greek yoghurt

1 lemon (juice and zest)

1 garlic clove (crushed)

1 tsp dijon mustard

2 tablespoons of olive oil

1 generous pinch of sea salt flakes

1 teaspoon of ground Tasmanian Pepper Co pepper berry

METHOD: Grab a medium size saucepan and fill it half way with water, adding the pinch of sea salt and bring it to the boil before reducing to a simmer. Add the whole chicken breasts and poach for about 10-15 minutes or until you’re able to tear the meat with a fork.

Once ready, remove the chicken from the water, let it cool for 2-3 minutes and then use a fork to tear the chicken apart into small pieces. Set it aside and let’s get the salad ready.

Heat a fry pan and lightly fry the chopped bacon or cured meat and then let it cool before adding to the salad.

Place the chopped cos lettuce into a bowl with the chopped nuts and then add the bacon and the chicken.

For the dressing. Place the dressing ingredients into a small bowl and mix. Add the yoghurt, the lemon juice and zest, the ground pepper berry, garlic and dijon mustard and once combined pour all over the salad and use a big wooden spoon to mix or if your bowl has a lid, add the lid and give it a good shake!

Verdict from the Pepper Co People - We absolutely love this healthier take on a caesar salad and it’s packed full of flavour! If you’re making it for just two of you, the salad keeps well to enjoy for lunch the next day too or half the salad mix before adding the dressing and add the dressing to the other half the next day!
